Join us for the next edition of the Chef’s Table at Stock, an intimate evening with Stephen Sandoval, the visionary force behind the award-winning Diego, the critically acclaimed Trino (Eater’s "Best New Restaurant" 2025), and the highly anticipated Entre Sueños.

This immersive dinner is a deep dive into Sandoval’s "borderless Baja" philosophy. Raised in San Diego and shaped by his Mexican, New Orleans, and Galician heritage, Chef Stephen’s career is a roadmap of global culinary excellence. His journey has taken him from cooking over open flames with Francis Mallmann to serving as Head Chef at Leña Brava under Rick Bayless, and then to a master culinary residency with the legendary El Barri Group in Barcelona.

The Experience: Hosted in the historic Firehouse Loft, this evening breaks down the wall between chef and guest. With only a handful of seats gathered just steps from the kitchen, you’ll have a front-row seat as Chef Stephen translates his heritage and travels into a soul-stirring narrative.

Expect a menu that balances finesse with the bold, smoky soul of Northern Mexico and the Mediterranean. From pristine seafood and creative small plates to dramatic shared entrées inspired by the Valle de Guadalupe, each course highlights seasonal artistry and whole-animal cooking. This is a rare opportunity to experience the evolution of Sandoval’s distinctive voice in a setting that feels more like a private dinner among friends than a restaurant.
