We are beyond honored to kick off our 2026 Chef’s Table at Stock series with a collaboration that is as meaningful as it is delicious. While the physical doors of Dear Margaret are closed following a tragic fire, the spirit, soul, and flavor of one of Chicago’s most beloved restaurants are very much alive.
For two nights only—February 5 and 6—we are bringing Executive Chef Ryan Brosseau into the Firehouse Loft for an intimate, one-of-a-kind homecoming.
This isn’t just a dinner; it’s a front-row seat to the resilience and artistry of a culinary master. Chef Brosseau, a self-described “old-fashioned cooking dude,” blends the rugged traditions of his French-Canadian upbringing with a Michelin-level finesse that has captivated the nation.
The Experience: Hosted in the STOCK Firehouse Loft, the evening breaks down the wall between chef and guest. With only a handful of seats gathered just steps from the kitchen, you’ll witness firsthand the passion for preservation, whole-animal butchery, and heritage flavors that earned Dear Margaret a spot on The New York Times "50 Best Restaurants in America" and the 2025 Jean Banchet Award for Best Hospitality.
