We are honored to welcome Chef Margaret Pak of the acclaimed Thattu to the Firehouse Loft for a celebration of the vibrant, coastal flavors of Kerala. At Thattu, Chef Margaret pays playful homage to her husband Vinod’s native Southwest India through a modern, creative lens. Her journey is a remarkable one: after a decade in the corporate world, she pivoted to the kitchen to share the soul-stirring cuisine of the Malabar coast. What began as a humble pop-up grew into an award-winning James Beard Award semifinalist food hall stall, and has now been rooted in Chicago’s Avondale neighborhood for over three years.

Chef Pak has redefined the city’s South Asian dining scene, earning a spot on The New York Times "50 Best Restaurants in America." Every bite of her cooking is a harmony of tradition and innovation, where coastal seafood, creamy coconut, and dynamic spices find new expression.

The Experience: Hosted in the historic STOCK Firehouse Loft, this evening offers a rare look at the artistry behind one of the city’s most talked-about restaurants. With only 12 seats available just steps from the kitchen, you will experience the storytelling and heritage that define Chef Pak’s "mini Kozhikode in Chicago." Expect a menu that balances heat, heart, and tradition in a setting that feels less like a restaurant and more like a private dinner among friends.
